Young Nuremberg chef Valentin Rottner is a master of creative culinary craftmanship.
Bavaria’s culinary shooting star
Valentin Rottner is a high-flyer! Critics call Valentin's creations “young”, “purist” and “full of flavor”. Shortly after he founded the “Waidwerk” restaurant in the family-owned Gasthof Rottner in 2018, the magazine “Feinschmecker” declared him “Rising star of the year”, and a year later the Michelin Guide awarded him his first star. Gault Millaut awarded the Nuremberg native's restaurant 17 points and three caps. The interior of the “Waidwerk” reflects the character of the cuisine: both traditional and stylish.
Valentin's Bavarian experience
Fine dining, reloaded
Only one year after launching his “Waidwerk” restaurant in 2018 under the roof of the family-owned “Gasthof Rottner” in Nuremberg, Valentin Rottner received his first Michelin star. Guests will literally be surprised by his extraordinary culinary creations as every course of the menu is only described with its basic products. Just order and enjoy!
Valentin's insider tip
Franconian Switzerland is perfect for hiking and great for family outings. I have fond childhood memories of going to the summer toboggan run in Pottenstein.
