Reinventing beer for the 21st century
Kilian loves to experiment. He is never happier than when he is standing in his kitchen with a large saucepan, playing around with new beer recipes. Color, aroma, alcohol content - before he starts, Kilian already has an idea of how the beer should taste. Even though beer consists of just four ingredients - malt, hops, water and yeast - it's not always easy to find the right mix. His beers all comply with the German Purity Law and mature for between six and eight weeks, depending on custom. In 2020, Kilian Stückler took over the brewery, which has been family-owned for 160 years, making him the sixth generation to run it.

Meet the “red beer” maker
Fancy trying a red beer? Sixth generation master brewer Kilian Stückler has perfected his red-coloured “Rote Perle” (red pearl) through 16 variations. Beer tastings and tours of his family’s “Hirschbräu” brewery, founded in the Alpine town of Sonthofen in 1657, are a special treat for beer lovers. And there’s even a brewery hotel on site!

Sonthofen has some of the Allgäu region’s most beautiful cycling routes on its doorsteps. My favorites: Taking in the scenery on the Königssträßchen or cycling through the Oytal valley.
